I had some bananas in the house that were past their prime so of course I made them into banana bread. The only problem is I don't really like banana bread. I'm always trying to come up with a way to temp me to eat it, because it would be just silly to make up an entire loaf of banana bread only to throw it away when throwing away food is what I was trying to avoid in the first place. I'm not that into chocolate chips either (I know, I'm so picky!) so I put my thinking cap on and here's what I came up with.
Banana Bread Deluxe
I used the recipe from Better Homes and Garden and tweaked it a little. I tripled the cinnamon (something I do like a lot of) and added a chopped apple, a handful of raisins and a handful of pecans.
It all came together rather nicely.
And made a beautiful bronze loaf of quick bread.
Which lived up to it's name and disappeared very quickly.
Banana Bread Deluxe (adapted from Better Homes and Garden's Banana Bread recipe)
1.5 cups all purpose flour
1.5 tsp baking powder
1/4 tsp baking soda
1 tsp cinnamon
1 egg
1 cup mashed bananas (3 medium)
3/4 cup sugar
1/4 cup canola oil
1 cup chopped apple (1 medium)
1/4 cup raisins
1/2 cup chopped pecans
Preheat oven to 350 degrees F
Grease bottom and sides of an 8x4x2-inch loaf pan. Set aside.
In a mixing bowl combine flour, baking powder, baking soda, and cinnamon
In a separate bowl combine bananas, sugar, oil and egg
Mix dry and wet ingredients together.
Fold in apples, raisins, and pecans.
Pour mixture into greased loaf pan.
Bake at 350 degrees (F) for 50 minutes or until your toothpick comes out clean.
