Cucumber Recipes

I have quite the influx this week of cucumbers. We picked three off our plants in the last two days with three more basically ready to be picked. I also got two from the CSA Tuesday. I figured I better find some quick and easy ways to eat them up.

I love greek salad so having it on a skewer seems fun. I have company coming in this weekend and think this will be a cute way to spruce up our cookout.

I love a simple cucumber salad with mayonnaise and vinegar. We had this the other night for dinner and it was delicious. I'm tempted to have it again for lunch!

A few years ago I had cucumber water at a spa. It's very refreshing and is definitely on my list for this week.

I love cucumber sandwiches at baby or bridal showers. I'm thinking I might just have to whip up a batch and eat them all myself.

Hello! Shut the front door. A cucumber recipe with scallops. Yummo!  This moves cucumbers from lunch and showers to dinner. Right where I need them. Who ever thought to saute cucumbers?

There are tons of recipes out there for relishes and salads and sandwiches. Let me know if you have a favorite.
